Tiramisu

Ingredients: 

500 g Mascarpone
4 eggs, separated
120 g powdered sugar
2-3 C strong espresso
200 g ladyfinger biscuits
cocoa powder

Beat egg yolks with 1/2 of the sugar until light and fluffy, then add mascarpone and mix until smooth. Whip egg whites with other 1/2 of sugar until stiff peaks form.

Gently fold the egg whites into the mascarpone mixture to make the pastry cream.

Dip the ladyfingers quickly into espresso and arrange in a single layer in a rectangular dish. Spread 1/2 of the pastry cream on top of the biscuits, then top with another layer of espresso-dipped lady fingers and another layer of pastry cream.

Cover the top with a dusting of cocoa powder and refrigerate overnight.

Chris' Handmade Classic Margaritas

Ingredients: 

2 oz. Tequila
2 oz. Cointreau
2 oz. Fresh lime juice (Californian or Mexican limes)
1/2 tsp. Powdered sugar

Add all ingredients to a cocktail shaker with 6 - 7 ice cubes. Shake for 30 seconds. Pour into a salt-rimmed glass. Drink. Repeat.

Bagels

Ingredients: 

4½ C flour
3 T sugar
1½ t salt
1 package (1/4 oz) dry yeast
1 2/3 C warm water
2 T margarine
1 T sugar
2 t salt

Mix 1-1/2 cup flour, 3 tablespoons sugar, 1-1/2 teaspoons salt, and yeast. Heat water and butter to 120-130 degrees F. Add water to dry ingredients; beat 2 minutes at medium speed on mixer. Add 1/2 cup flour, beat at high speed 2 minutes. Stir in more flour to make a stiff dough. Knead 8-10 minutes. Cover and let rise. Punch down. Cover; let rest 15 minutes.

Tezaur Jidvei

2008 Tezaur Jidvei Sauvignon Blanc cu Feteasca Regala - Unusually crisp, dry Romanian white. Excellent summer wine but will probably hold up well in colder weather. Light oak, apple and pear overtones with a clean finish.

Neva's Summer Camp

Saturday, July 3rd, we go to a summer camp kick-off party at Little London Preschool, and Neva gets to check out the classrooms, the pool, the tennis courts, the pool, the gym area, and did I mention the pool? She even enters a swimming race and ties for 2nd place in her heat (out of 4 kids). Typical of Romanian organization, the contest is arranged by lining the kids up by height, and then sending them, 4 at a time, into the pool to race.

Our new apartment. June 30, 2010

Grammie is scheduled to leave in a few days and we’re desperately trying to take advantage of having an extra pack mule to help us move. So, I pack up all of our stuff (for the third time in as many weeks), and we shuttle the bags out to the corner to hail 2 taxis. Mom rides alone in one, following Neva and me in another after I give the address to the drivers. My driver races through the city, and I try to remind him that the other driver is following him, and he does slow down about 2 km/hr.

Life in the service flat. June 20, 2010

It is HOT! After venturing out to explore the parks and track down the grocery stores a few times, Mom, Neva and I retreat into the relative cool of the apartment. Neva gets an early birthday present of Barbie rollerblades, which of course necessitates the purchase of Disney Princess pads and a helmet. When she gets all geared up, we can hardly see Neva through the pink. We have been venturing out to the sidewalk in the relative cool of the evening for her to practice and she is starting to get the hang of the movements and can really take off now.

Home Sweet Home

As my second full day in Bucharest winds down, I thought now would be a good time to take a moment and catch up on how things are going on our "Big Adventure" as it has come to be called. Our flights were fine, and Neva even made friends with another little girl in the airport. She was so excited to come tell me, "Mom, she speaks English!" Of course, we were in London, so our chances were pretty good, but it was reassuring for her to find a girl from Miami to play dolls with.

Pirohy

Ingredients: 

Filling
4 large potatoes
4-5 slices of American cheese
1 1/2 tbsp butter

Dough
6 C flour
6 eggs
1 C sour cream
pinch of salt

Filling
Boil potatoes in salted water. When cooked, mash with cheese and butter.

Dough
Make a well in the center of flour. Add eggs, sour cream and salt in the well and work together, kneading well. Roll out until thin on well-floured board. Cut into squares and fill. Fold into triangles and seal. Leave on board to dry.

Boil gently in small batches for 5 mins after pirohy rise to the surface. When ready to serve, cook in melted butter to warm.
