Gorgonzola Cream Sauce

Ingredients: 

1 1/2 C dry white vermouth
2 1/4 C heavy cream
pepper
nutmeg
2 tbsp salt
3/4 lbs Gorgonzola cheese, crumbled
1 1/2 tbsp grated parmesan cheese

Bring vermouth to a boil in a small heavy saucepan and reduce by half. Add heavy cream, bring to a boil and lower heat to a simmer. Season with pepper and nutmeg and simmer for 15 mins until reduced by 1/3. Remove sauce from heat, stir in half the Gorgonzola and all of the parmesan and pour over pasta. Cook gently, stirring constantly for 5-8 mins until cream has thickened and the pasta has absorbed some of the sauce. Sprinkle with remaining half of Gorgonzola when serving.

Notes: 

Serve with 1 1/2 lbs fresh tortellini.

Shrimp Scampi

Ingredients: 

1 tbsp butter
2 tbsp olive oil
4 cloves garlic, finely chopped
1 lb shrimp, cleaned
1/4 C dry white wine
1 tbsp lemon juice
1/2 tsp salt
1/8 tsp pepper
1 tbsp bread crumbs
2 tbsp parsley

Heat butter and oil in nonstick skillet. Cook garlic for 1 min. Add shrimp, cook 2 mins. Add wine, lemon juice, salt and pepper. Cook 2 mins until shrimp is cooked through. Stir in bread crumbs and parsley.

German Potato Salad

Ingredients: 

4 slices bacon
1/4 C chopped onion
1 tbsp flour
2 tbsp sugar
3/4 tsp salt
1/4 tsp celery seed
dash pepper
1/4 cup water
1/4 C vinegar
1 1/2 C cooked, cubed potatoes
2 Polish sausages, bias sliced
1 tbsp parsley

Cook bacon until crisp and crumble. Reserve 2 tbsp drippings and cook onion until soft. Stir in flour, sugar, salt, celery seed and pepper. Add vinegar and water, cook and stir until thick and bubbly. Add potatoes, sausage and parsley, and spoon into casserole dish. Bake at 350 for 25-30 mins.

Tuna au Gratin

14 oz canned tuna, drained and flaked
2/3 C chopped onion
1/4 C chopped green pepper
1/4 C chopped pimento
2/3 C mayonnaise
1/4 C dry bread crumbs
1/4 C grated parmesan cheese

Combine first 5 ingredients and spoon into shallow baking dish. Sprinkle with bread crumbs and cheese and bake at 350 for 20 mins.

Ingredients: 

2 C elbow macaroni
1 1/2 lbs ground beef
1 small onion, chopped
8 oz tomato paste
1/3 C water
2 tsp salt
1/4 C grated hard cheese
1 tsp salt
1/8 tsp nutmeg
1/8 tsp cinnamon
2 1/3 C milk
1/3 C butter
4 eggs, beaten

Cook macaroni and set aside.
Cook meat and onion until browned. Stir in tomato paste, water and 2 tsp salt.
Mix cheese, 1 tsp salt, nutmeg and cinnamon.
Layer macaroni, meat mixture and cheese mixture in greased 13x9 dish.
Cook milk and butter until butter is melted. Gradually add into beaten eggs and pour over macaroni.
Bake at 325 until bubbly (55 mins)

Chicken Tarragon

Ingredients: 

2 tsp seasoned salt
1/4 tsp pepper
dash paprika
2 1/2 - 3 lbs chicken pieces
1/4 C butter
1 medium onion, thinly sliced
3 oz canned mushrooms
2 tsp dried tarragon
1/4 C water

Combine seasoned salt, pepper and paprika. Sprinkle over chicken, then brown slowly in butter. Remove from pan, and add onion, cooking until tender. Put chicken back into pan, adding mushrooms, tarragon and water. Cover and simmer 30-40 mins.

Yorkshire Pudding

7/8 C flour
1/2 tsp salt
1/2 C milk
2 eggs, beaten
1/2 C water

Sift dry ingredients together. Add milk gradually, stirring all the time. When smooth, beat in eggs, then add water. Beat vigorously until batter bubbles. Let stand for at least 1 hour before cooking, then beat again just before baking.

Ingredients can also be mixed in a blender on high for 15 seconds.

Melt butter in tins and bake for 20 mins at 400, then 15 mins 350.

Filling:
4 large potatoes
4-5 slices American cheese
1 1/2 tbsp butter

Dough:
1/2 C milk
1/2 cake yeast
1/2 tbsp butter
1/2 tbsp sugar
1/4 C warm water
3 C flour
1 egg yolk, slightly beaten
1 tsp salt

Scald 1/2 C milk. Add butter and sugar and heat until butter is melted. Take small a mount of mixture, cool slightly and crumble yeast into mixture. Let stand in warm place for about 10 mins. Add dissolved yeast mixture to remaining milk mixture. Sift flour into salt and add egg, yeast mixture and warm water. Knead well. Cover and place in warm place to rise until doubled (about 2 hours). Divide dough into two portions and turn out on floured board. Cover each portion and let rest for 10 mins. One piece at a time, turn over onto hand and flatten in center.

1 3/4 C flour
1 tsp baking soda
1/2 tsp salt
1/2 C sugar
1/2 C brown sugar
1/2 C peanut butter (smooth)
1 egg
2 tbsp milk
1 tsp vanilla
1/2 C shortening
48 Hershey kisses

Mix all ingredients together. Roll in sugar and bake for 10-12 mins at 375. Place a kiss on each cookie while still warm.
