Molasses Crinkles

Ingredients: 

3/4 C shortening
1 C brown sugar
1 egg
1/4 C molasses
2 1/4 C flour
2 tsp soda
1/4 tsp salt
1/2 tsp cloves
1 tsp cinnamon
1 tsp ginger
sugar (for dipping)

Mix shortening, sugar, egg and molasses. Blend all dry ingredients and add. Chill dough. Roll dough into 1 1/4" balls and dip tops in sugar. Place balls, sugared side up on greased baking sheet. Sprinkle each with 2-3 drops of water and bake at 10-12 mins at 375 or until set but not hard.

Peanut Butter Cookies

Ingredients: 

1/2 C shortening (half butter)
1/2 C peanut butter
1/2 C sugar
1/2 C brown sugar
1 egg
1 1/4 C flour
1/2 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt

Mix shortening, peanut butter, sugars and egg. Blend all dry ingredients and stir into shortening mixture. Chill dough. Roll dough into 1 1/4" balls and place onto ungreased baking sheet. Flatten with a fork and bake 10-12 mins at 375.

Spritz cookies

Ingredients: 

1 C butter
1/2 C sugar
1 egg
1/2 tsp salt
1 tsp almond or vanilla flavoring
2 1/4 C flour

Mix butter, sugar, egg, salt and flavoring. Work in flour. Force dough through cookie press onto ungreased baking sheet. Bake 6-9 mins at 400 until set but not brown.

Notes: 

For chocolate: add 2 oz melted unsweetened chocolate.

Lemon Squares

Ingredients: 

1 C flour
1/2 C butter
1/4 C powdered sugar
2 eggs
1 C sugar
1/2 tsp baking powder
1/4 tsp salt
2 tbsp lemon juice

Blend flour, butter and powdered sugar. Press into square pan 8x8x2. Bake 20 mins at 350. Beat remaining ingredients together. Pour over crust and bake 20-25 mins.

The Second Happiest Place on Earth and more

After an incredible day at Disneyland, we got up and on the road the next morning headed south on the 5. It was a bit nostalgic for the grown ups as we passed our old stomping grounds in both Costa Mesa and Dana Point on our way to Carlsbad. Neva perked up a bit once she recognized the giant Lego letters on the drive into Legoland and immediately asked if I had brought her bathing suit.

UPDATE: We finally have pictures!

Wednesday 3/17/10 was the kick off of our whirlwind tour of the Southwest. We had a good indication that the trip was going to go well when we arrived at LAX (me from SFO and Louisa and Neva from BOS) within 5 minutes of each other at adjacent gates - a serendipitous start to be sure!

After car rental (a Yaris, not our favorite, but at least no “acceleration issues”) we headed south to Anaheim and the Doubletree Disneyland, which ended up being a great hotel - not that we were there all that much.

Renee's Creamy Pumpkin Dip

Ingredients: 

2 (8oz) packages cream cheese, softened
1 (16oz) package powdered sugar, sifted
1 (16oz) can pumpkin
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg

Beat cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating well. Stir in pumpkin, cinnamon, and nutmeg. Serve immediately or cover and chill.

Serve with ginger snaps or apple slices.

Roasted Shrimp Salad

Ingredients: 

2 1/2 pounds (12 to 15 count) shrimp
1 tablespoon good olive oil
Kosher salt and freshly ground black pepper
1 cup good mayonnaise
1 tablespoon orange zest (2 oranges)
2 tablespoons freshly squeezed orange juice
1 tablespoon good white wine vinegar
1/4 cup minced fresh dill
2 tablespoons capers, drained
2 tablespoons small-diced red onion

Preheat the oven to 400 degrees F.

Peel and devein the shrimp. Place them on a sheet pan with the olive oil, 1 teaspoon salt and 1/2 teaspoon pepper and toss together. Spread the shrimp on one layer and roast for 6 to 8 minutes, just until pink, firm and cooked through. Allow to cool for 3 minutes.

Momo

Light and fruity. This was a Wine Spectator 90 and definitely not bad for a fairly inexpensive ($14) Sauvignon Blanc. It's a bit on the sweet side, but certainly drinkable, particularly in the summer. Would buy again.

Who Loves Ya Baby-Back?

Main CoursesMain Courses
Ingredients: 

* 2 whole slabs pork baby back ribs

Dry Rub:

* 8 tablespoons light brown sugar, tightly packed
* 3 tablespoons kosher salt
* 1 tablespoon chili powder
* 1/2 teaspoon ground black pepper
* 1/2 teaspoon cayenne pepper
* 1/2 teaspoon jalapeno seasoning
* 1/2 teaspoon Old Bay Seasoning
* 1/2 teaspoon rubbed thyme
* 1/2 teaspoon onion powder

Braising Liquid:

* 1 cup white wine
* 2 tablespoons white wine vinegar
* 2 tablespoons Worcestershire sauce
* 1 tablespoon honey
* 2 cloves garlic, chopped

Preheat oven to 250 degrees.

In a bowl, combine all dry ingredients and mix well. Place each slab of baby back ribs on a piece of heavy-duty aluminum foil, shiny side down. Sprinkle each side generously with the dry rub. Pat the dry rub into the meat. Refrigerate the ribs for a minimum of 1 hour. In a microwavable container, combine all ingredients for the braising liquid. Microwave on high for 1 minute.
