Pumpkin Pie

Ingredients: 

1 ½ C pumpkin
1/3 C brown sugar
1/3 C white sugar
1 t ginger
1 t cinnamon
¼ t nutmeg
¼ t cloves
3 eggs
1 ½ C milk, ½- ½
½ C cream

Combine ingredients. Pour into an unbaked pie crust and bake 50-60 mins at 400.

Portabello Burgers

Ingredients: 

¼ C chicken broth
2 T olive oil
2 t balsamic vinegar
1 t thyme
salt/pepper
4 4”diameter portabello mushroom caps
1 lemon
1/3 C mayonnaise
1 green onion, minced
hamburger buns
arugula (lettuce)

Mix together chicken broth, oil, vinegar, thyme, salt and pepper. Marinate mushrooms in mixture for 30 min. Mix together mayonnaise, lemon peel, ½ t juice, green onion, salt and pepper. Grill mushrooms. Top with mayonnaise mixture and lettuce. Serve on hamburger buns.

Ingredients: 

2 C flour
1 T baking powder
1 ½ C sugar
¾ C shortening
2 egg yolks, beaten

Mix flour, sugar and baking powder. Add shortening and egg yolks, cutting in the liquids with a fork. Form cookies (the dough should be dry and grainy, difficult to form cookies). Cook on greased sheet 30 mins at 350.

Poisson Cru

Ingredients: 

12 ounces tuna loin, diced
1/2 cup quartered, sliced fresh cucumber
1/2 cup julienned carrots
1/4 cup julienned red pepper
1/4 cup julienned yellow pepper
1/2 cup diced tomato
1/2 cup sliced white onion
1/4 cup chopped chives
Salt
1/4 cup lime juice
1 fresh whole coconut, split and meat grated to equal 2 cups

In a large mixing bowl, combine the tuna, cucumber, carrots, peppers, tomato, onion, and chives. Gently toss with hands. Season with the salt and lime juice. In the piece of cheesecloth, add the grated coconut. Then gather up the ends and over the bowl, wring out the milk from the coconut by twisting the cheesecloth tighter and tighter; retain the coconut juice for another recipe (notably Prawns with Vanillla Coconut Sauce, also shown on this show). Gently toss the ingredients in the bowl again and serve immediately.

Notes: 

2 servings as a main course or four as an appetizer

Mushroom Hash

½ C porcini olive oil
2 lbs shitake, domestic, or wild mushrooms, trimmed and quartered
salt/pepper
2 T chopped fresh thyme (2 t dried)
¼ C finely chopped garlic
2 T chopped parsley

Cook batches of mushrooms in equal proportions of oil until browned. Add salt/pepper, thyme and parsley. Add garlic to last batch. Mix together and serve warm, or refrigerate up to 2 days.

Mushroom Artichoke Pasta

Ingredients: 

2 lg artichokes
2 T lemon juice
½ C porcini olive oil
1 lb domestic mushrooms, sliced
1 T garlic, minced
1 T fresh thyme, chopped (1 t dried)
4 C chicken broth
¾ lb pasta
1 bunch spinach, well washed and dried
1 bunch flat leaf parsley, minced
salt/pepper
1 C Parmesan cheese

Remove leaves from artichokes. Trim off all dark green parts, cut in half and remove the choke. Slice the heart thinly and put in lemon water to keep color. Sauté mushrooms and artichokes in 2 T porcini oil until brown. Add garlic, sauté until brown. Add thyme, and chicken broth. Bring to a boil and reduce by half. Cook pasta. Add spinach to sauce just to wilt, add remaining oil, parsley, salt/pepper. Toss with pasta and ½ of the cheese. Serve, top with remaining cheese.

Massaman Curry

2 fresh lemon grass stalks
12 small dried red chili peppers, seeded
1 (1-inch) piece fresh galangal, chopped or 4 slices dried
2 red onions, chopped
12 garlic cloves
2 tablespoons coriander seeds
1 tablespoon cardamom seeds
2 teaspoons cumin seeds
1/2 cinnamon stick
1 teaspoon cloves
1 teaspoon ground mace
1 teaspoon freshly grated nutmeg
1 teaspoon whole black peppercorns
1 teaspoon shrimp paste
4 bay leaves

Remove and discard the outer leaves and upper half of the lemon grass stalks, and chop the bottom half into 1-inch pieces. Soak all the dried ingredients for 30 minutes, or until softened. Place all the ingredients in a food processor, and blend to a smooth paste. Add a little water if necessary to thin.

Manicotti

½ lb. Ground Beef
½ Cup Mayonnaise
1 Garlic Clove, Crushed
8 Manicotti Cooked and Drained
1 Cup Cottage Cheese
1 Jar (16oz.) Spaghetti Sauce
4 ounces Shredded Mozzarella Cheese
½ Tsp. Dried Oregano
½ Tsp. Salt
Parmesan Cheese

Brown beef and garlic; drain fat. Mix next 4 ingredients in bowl; stir in beef. Fill each manicotti with about ¼ Cup cheese-meat filling. Place in baking dish; cover with sauce. Sprinkle with oregano and cheese. Cover with foil. Bake at 350 F. oven 15 minutes. Remove foil; bake 10 minutes longer. Serves 4.

Mama's Tuna "Casserole"

Ingredients: 

1 C milk
1 tomato (hard)
½ onion
½ green, red pepper
3 eggs
½ C bread crumbs
1 can tuna
parsley

Blend all ingredients except tuna and bread crumbs in blender or food processor. Add to tuna and breadcrumbs. Cook for 1 hr.
