Chocolate Praline Pie

Ingredients: 

2 cups heavy cream
1/4 cup cornstarch
1/2 cup light brown sugar
1/2 cup Steen's 100 percent Pure Cane Syrup
1 cup melted Hawaiian Vintage Chocolate
1 cup crumbled Creamy Pralines
1 (9-inch) chocolate cookie crust, baked
2 cups sweetened whipped cream
Drizzles of Caramel Sauce

In a saucepan, over medium heat, whisk the cream, cornstarch, brown sugar
and cane syrup together. Cook for 10 to 12 minutes, or until a light
custard forms. Stir in the chocolate and mix well. Place a piece of plastic
wrap directly on top of the custard. Cool completely. Fold in half of the
crushed pralines. Pour the custard into the pie shell. Sprinkle the top
with the remaining pralines. Refrigerate for 4 hours before serving. Serve
each slice with whipped cream and a drizzle of Caramel Sauce.

Yield: 8 servings

Chickent Tarragon

Ingredients: 

2 teaspoons seasoned salt
¼ teaspoon pepper
Dash paprika
1 2 ½- to 3-pound ready-to-cook broiler-fryer chicken, cut up
¼ cup butter or margarine
1 medium onion, thinly sliced
1 3-ounce can sliced mushrooms, drained (1/2 cup)
2 teaspoons dried tarragon, crushed
¼ cup water

Combine first 3 ingredients; sprinkle over chicken. Brown slowly in butter; remove from pan. In same pan, cook onion till tender. Move onions aside and place chicken in pan. Add mushrooms and tarragon and spoon with onions over chicken. Add water; cover and simmer till chicken is tender, about 30 to 40 minutes. Makes 4 servings.

Notes: 

Serve with biscuits (Pilsbury or similar) - they're the best part!

Chicken Diane

Ingredients: 

4 large boneless chicken breasts
½ t salt
black pepper
2 T olive oil
2 T butter
3 T chopped fresh chives or green onions
Juice of ½ lime or lemon
2 T brandy of cognac
3 T chopped parsley
2 T Dijon mustard
¼ C chicken broth

Flatten chicken breasts, sprinkle with salt and pepper. Heat 1T each of oil and butter in a large skillet. Cook chicken on high for 4 min. each side – do not overcook. Remove chicken and add chives or green onion, lime juice, brandy, parsley and mustard to pan. Cook 15 seconds while whisking constantly. Whisk in broth, stir sauce until smooth. Whisk in remaining butter and oil. Pour sauce over chicken.

Chicken & Cheese Enchiladas

Ingredients: 

1 medium onion, chopped
2 T margarine
1&1/2 cup shredded cooked chicken or turkey
12 oz. picante sauce, divided
3 oz. cream cheese, cubed
1 t cumin
2 c (8 oz.) shredded Extra Sharp Cheddar Cheese, divided
8 (6-inch) flour tortillas

Heat oven to 350 degrees. Cook and stir onion in margarine in large
skillet until tender. Stir in chicken, 1/4 cup picante sauce, cream
cheese, and cumin. Cook until thoroughly heated. Stir in 1 cup
cheese.

Spoon approximately 1/3 cup chicken mixture in center of
each tortilla; roll up. Place seam side down in 12x7-inch baking
dish. Top with remaining picante sauce and cheese.

Bake 15 minutes.

Notes: 

Preparation/Cooking time: 10 Min./15 min.
Number of servings: 4-6 servings

Ceasar Mayonnaise

For Caesar mayonnaise
1/2 cup packed fresh flat-leafed parsley leaves
2 teaspoons minced garlic
1/4 teaspoon salt
1 cup mayonnaise
1 cup freshly grated Parmesan (about 3 ounces)
1 teaspoon mashed drained anchovy fillet, or to taste
3 tablespoons fresh lemon juice
freshly ground black pepper to taste

Chop parsley and mash garlic to a paste with salt. In a
bowl stir together parsley, garlic paste, and remaining
mayonnaise ingredients and season with salt if necessary.
Mayonnaise may be made 1 week ahead and chilled, covered.

Notes: 

Can be used as a vegetable dip

Brownies (low fat)

Ingredients: 

½ C cake flour
½ C unsweetened cocoa powder
salt
2 egg whites
1 egg
¾ C granulated sugar
6 T unsweetened applesauce
2 T vegetable oil
1 ½ t vanilla
nuts

Grease an 8” baking pan. Combine flour, cocoa, salt. In a separate bowl, whisk together egg whites, egg, sugar, applesauce, oil and vanilla. Stir in flour mixture until just blended. Pour into prepared pan, sprinkle with nuts. Bake until just set, about 25 mins at 350.

Note: For chewier brownies, substitute cake flour with 7 T all-purpose flour.

Boston Cream Pie

6 T butter
¾ C sugar
2 eggs, slightly beaten
1 t vanilla
1 ½ C cake flour
2 t baking powder
¼ t salt
½ C milk
1 C scalded milk, cooled
½ C sugar
2 T cornstarch or flour
3 eggs, slightly beaten
1 t vanilla
3 oz semi-sweet chocolate
2 T butter
¼ C milk or cream
½ C powdered sugar
½ t vanilla

Cake:
Cream butter and sugar. Blend in eggs and vanilla. Combine flour, baking powder and salt. Add alternately with milk to mixture. Pour into two 9” cake pans. Bake 15 mins at 375. Cool on wire rack.

Filling:
Cook milk and sugar until sugar has dissolved. Separately, whisk cornstarch/flour into eggs until smooth. Add 2 T of milk mixture to eggs. Add eggs to milk, whisking until blended. Continue cooking until mixture thickens slightly. Remove from heat. Add vanilla, and cool to room temperature.

1 Stick Butter
2 C powdered sugar
2 sticks butter
2 eggs
1 tsp vanilla
3rd Layer
2 to 5 bananas sliced
20 oz. crushed pineapple drained
1 C chopped nuts
1 small jar cherries quartered (about 15)

1st Layer
2 C graham cracker crumbs
1 Stick Butter
Mix and spread in 13x9 pan

2nd Layer
2 C powdered sugar
2 sticks butter
2 eggs
1 tsp vanilla
Beat together for 15 min. until creamy

3rd Layer
2 to 5 bananas sliced

4th Layer
20 oz. crushed pineapple drained

5th Layer
1 C chopped nuts

6th Layer
1 small jar cherries quartered (about 15)

Cover with 2 C whipped cream or cool whip. Chill 8 hours or overnight
