Maria Auxiliadora’s Chocolate Cake

Ingredients: 

1 ½ C sugar
½ C butter
6 eggs
2 C milk
3 C flour
1 ½ t baking powder
vanilla
4 oz semi sweet chocolate, melted

Cream butter and sugar. Add egg yolks gradually. Add milk and flour alternately. Add baking powder and vanilla, and melted chocolate. Fold in beaten egg whites. Bake about 1 hr at 350.

Honey Cake

Ingredients: 

8 eggs
2 C honey
2 C sugar
1 C strong tea
1 C vegetable oil
1 C rum (small)
1 t baking powder
3 C flour

Beat eggs, honey, sugar, tea, oil, rum and baking powder. Gradually add flour and beat until bubble form. Pour into greased and floured pan. Bake 1 ½ hrs at 350.

Cheesecake

Ingredients: 

2 ½ C graham cracker crumbs
¾ C melted butter
8 oz cream cheese
½ C sugar
1 T lemon juice
½ t vanilla
2 eggs
1 ½ C sour cream
3 T sugar
¾ t vanilla

Crust:
Combine and press into a 9” pie pan.

Filling:
Beat cream cheese until fluffy. Blend in sugar, lemon juice and vanilla. Add eggs one at a time, beat after each one. Pour into crust. Bake 25-30 mins at 350.

Topping:
Combine and spoon over warm cheesecake. Bake 10 mins. Chill several hours.

Banana Nut Coffee Cake

Ingredients: 

¼ C vegetable oil
¼ C milk
1 egg
1 mashed ripe banana
½ C brown sugar
¾ C flour
½ C chopped nuts
¾ t baking powder
¼ t baking soda

Topping:
¼ C brown sugar
¼ C chopped nuts
2 T flour
1/8 t cinnamon
1 T butter

Combine oil, milk, egg, banana, sugar. Add flour, nuts, baking powder and baking soda. Stir only until flour is moistened. Pour into a greased pan. Sprinkle topping (see below). Bake. Let cool 10 mins in pan before turning out.

Topping:
Combine all dry ingredients. Cut in butter

2 T sugar
1 ½ t salt
3 t yeast
3 C flour
1 ¾ C milk
1 C butter
1 egg
1 T water

Combine sugar, salt, yeast, and 1 C flour. Heat milk to 120-130 degrees. Slowly beat milk into dry ingredients until just blended. Beat 2 mins, medium speed, occasionally scraping bowl. Beat ½ C flour, beat 2 mins more. Stir in about 1 C flour to make

Sausage Breakfast Casserole

Ingredients: 

6 slices white bread, torn into large cubes
12 oz bulk pork sausage (tube)
4 oz sliced mushrooms, drained
1 ½ C cheddar cheese, shredded
½ C chopped onion
6 eggs
3 C milk
1 can Cream of Mushroom soup
1 C sour cream

Brown sausage with onion and mushrooms. Crumble bread slices into 9x13 casserole dish. Add sausage mixture. Whisk together eggs and milk. Add salt and pepper. our egg mixture into casserole. Cover with cheese. Refrigerated at least one hour (up to overnight).

Bake at 350 for 45 minutes. Combine soup and sour cream and spread over casserole. Bake for an additional 15 minutes.

Puffy Creamed Potatoes

10 oz. potatoes
milk and butter for mashing
1 t. chopped fresh parsley
1 T. chopped fresh tarragon
3 oz. all-purpose flour
1 egg
about 1/2 C. milk
oil for baking
salt and pepper

Preheat oven to 400.

Boil potatoes until tender and mash wth a little milk and butter. Stir in chopped parsley and tarragon and season with salt and pepper to taste.

Process flour, egg, milk, and salt in food processor or blender to make a smooth batter.

Place about 1/2 t. oil in each of six ramekin dishes and place in the oven on a baking sheet for 2-3 minutes until the oil or fat is very hot.

Boston Brown Bread

1 egg, slightly beaten
3 T sugar
1 C dark molasses
¾ C buttermilk
½ t salt
1 C whole-wheat flour
1 C flour
¾ t baking soda
¾ t baking powder
½ C raisins

Combine egg, sugar, molasses and buttermilk. Add salt, flour, baking soda, and baking powder, mix well. Fold in raisins. Pour into greased tin cans and bake for 40-50 minutes at 350

Chile Relleno Casserole

1 can whole chilies.
4 eggs, beaten
1 can evaporated milk (large can)
4 Tablespoons of flour
Salt and pepper to taste
Cheddar and jack cheese grated. (enough to make a layer of each, approx. two
or three cups)
About a cup of Salsa (enough for a thin layer on top)

Use a 9 X 13 pan, grease the bottom or spray with Pam Wash and drain the chilies and remove seeds. Drain on paper towel. Tear chili's in half from stem to bottom. Line the bottom of your pan with half of the chilies. Sprinkle the cheese over the first layer, both cheddar and jack
Layer the rest of the chilies over the cheese Mix eggs, milk and flour, salt and pepper until smooth. Pour over the chilies. Cover with foil
