Who Loves Ya Baby-Back?

Ingredients: 

* 2 whole slabs pork baby back ribs

Dry Rub:

* 8 tablespoons light brown sugar, tightly packed
* 3 tablespoons kosher salt
* 1 tablespoon chili powder
* 1/2 teaspoon ground black pepper
* 1/2 teaspoon cayenne pepper
* 1/2 teaspoon jalapeno seasoning
* 1/2 teaspoon Old Bay Seasoning
* 1/2 teaspoon rubbed thyme
* 1/2 teaspoon onion powder

Braising Liquid:

* 1 cup white wine
* 2 tablespoons white wine vinegar
* 2 tablespoons Worcestershire sauce
* 1 tablespoon honey
* 2 cloves garlic, chopped

Preheat oven to 250 degrees.

In a bowl, combine all dry ingredients and mix well. Place each slab of baby back ribs on a piece of heavy-duty aluminum foil, shiny side down. Sprinkle each side generously with the dry rub. Pat the dry rub into the meat. Refrigerate the ribs for a minimum of 1 hour. In a microwavable container, combine all ingredients for the braising liquid. Microwave on high for 1 minute.

Marisol's Spicy Jalapeno Pork Loin

Ingredients: 

1/4 tsp. crushed red pepper
1 whole jalapeno chopped fine - no seed
2 Tbsp. soy sauce
2 Tbsp. Teriyaki sauce
3 Tbsp. peanut or sesame oil
1/2 tsp ginger
1 tsp. garlic powder
3 tbsp. brown sugar
2 Tbsp. honey
4 Tbsp. orange juice
2 tsp. water

Marinate the pork for at least 24 hours. Sear all sides of pork loin in a cast iron skillet. Bake at 375 degrees 30 - 40 minutes. Keep covered for first 20 minutes of baking; baste periodically. Remove from oven and let meat rest. While meat is resting, thicken the drippings slightly over medium heat with 1 tsp. corn startch.

Serve over toated french bread slices with a liberal serving of sauce.

Pork and Shrimp Dumplings

Ingredients: 

1 lb ground pork
1 lb peeled, deveined shrimp
2 oz frozen peas
2 oz scallions, chopped
1 oz sesame oil
1 oz soy sauce
wonton wrappers

Mix all but the wrappers. Place ½ oz of mixture in the center of each wonton wrapper. Fold edges up and flatten base. Steam 5-6 mins. Serve with soy sauce and a dash of sesame and hot oils.
