Crab, Mango and Mint Nori Rolls

Appetizers
Ingredients: 

1/2 firm-ripe mango
1 pound jumbo lump crab meat
2 tablespoons fresh lime juice
1, tablespoons packed light brown sugar
2 tablespoons wasabi powder* or wasabi paste*
ten 8 x 7 1/2-inch sheets toasted nori*
1 cup packed fresh mint leaves

Cut skin from mango and cut flesh into julienne strips.
Pick over crab meat to remove any bits of cartilage and shell and in a bowl stir together with lime juice, brown sugar, and salt to taste. If using wasabi powder, in a small bowl stir together with 2 teaspoons water and let stand, covered, 10 minutes to make wasabi paste.

Notes: 

To make the nori rolls in this recipe we used a bamboo sushi mat*, available at the sources noted below. Alternatively, a 9-inch square of heavy-duty foil can be used.

Prawns with Vanilla Coconut Sauce

Appetizers
Ingredients: 

1 tablespoon butter
16 prawns (also called jumbo shrimp), peeled, deveined, tail on
1 vanilla bean, split
1/2 cup coconut milk, twisted from freshly grated coconut in a cheesecloth
Salt and ground black pepper

In a medium saute pan, melt the butter. Add the prawns and vanilla bean and let them saute for 2 minutes. Add the coconut milk and let it thicken. When the prawns are completely cooked, season with the salt and pepper and serve.

Mussles in a Ginger Pepper Sauce

Appetizers
Ingredients: 

2 t olive oil
1 ½ C finely diced yellow and red bell peppers
½ C finely diced red onion
1 T seeded and minced jalapeno pepper
1 T minced ginger
1 T minced garlic
½ dry white wine
½ C clam juice or water
3 T fresh orange juice
3 T fresh lime juice
1 t sugar
3 lbs mussels, rinsed, scrubbed and debearded
salt
¼ C chopped fresh cilantro

Heat olive oil in large pot. Add peppers and onion and cook until the peppers begin to soften. Add ginger and garlic and cook until fragrant. Add wine, clam juice orange juice, lime juice, sugar and mussels to the pot. Cover and cook until the mussels open.

Pork and Shrimp Dumplings

Appetizers
Ingredients: 

1 lb ground pork
1 lb peeled, deveined shrimp
2 oz frozen peas
2 oz scallions, chopped
1 oz sesame oil
1 oz soy sauce
wonton wrappers

Mix all but the wrappers. Place ½ oz of mixture in the center of each wonton wrapper. Fold edges up and flatten base. Steam 5-6 mins. Serve with soy sauce and a dash of sesame and hot oils.
